Store Introduction

We practice traditional Fujiami Shinko School knife sharpening techniques introduced in the Edo Period, and service knives by hand for individual customers.
Japanese knives have a reputation for world-class quality, and our techniques give such knives a world-class edge.
We opened the store in Kappabashi to fulfill our mission, which is to hand down the excellent techniques that our ancestors created to next generation.

    We faithfully follow the sharpening techniques handed down from the Edo Period. Integrating the modern with the traditional to produce the finest knives along with changes and improvements over time, we still sharpen every knife by hand.

  • Cooking knives and honbazuke sharpening

    Our experienced craftsmen recommend only the best knives from around the country to ensure that customers receive the finest quality.
    We provide honbazuke sharpening service for knives purchased at our store.

  • Replacement handles

    We also replace handles for both Japanese and Western cooking knives. We can also produce handles for Western knives from woodblocks.
